Braised Meat in Spinach ( Light Palak Mutton with aromatic spices )

This is one of my favorite meat recipes , as it is absolutely light on the stomach and the perfect peppery match with some Indian bread and green salad for a weekday dinner . It also qualifies as a one pot dish , since all one really need's to do is throw everything into a pressure cooker , braise and voila - it is ready . This dish is made by pre - braising the meat with some spices , potatoes and spinach and the end result is simplicity and flavor in its best form . I also categorize this as a power packed Indian stew , as this yields a good aromatic broth and is steeped in nutrient-rich elements , released from both the meat jus and the tender greens .
Spinach also happens to be another favorite green . Since the days of Popeye, it has been famous for its ability to make one "strong to the finish." While this leafy green won’t cause your biceps to inflate like balloons (!) it is dense in vitamins and minerals, low in calories and versatile in cooking. Let me take you through this easy cook .

Things you will need
500 gm Mutton , cut into large chunks
01 whole onion , made into a fine paste
01 tbsp garlic - ginger paste
01 whole bay leaf
02 whole dried red chilli
1/2 tsp whole cumin seeds
01 tbsp cumin powder
01 tsp Kashmiri red chilli powder
01 tsp pepper powder , coarsely ground
02 bunch's of spinach ( leaves separated )
02 whole potatoes , split into 2 pieces each
02 whole tomatoes , cut in 2 pieces each
01 tsp garam masala
03 tbsp ghee
Salt to taste
02 cups of water
Steps to follow
Rub the meat with some salt and keep aside in a bowl for 10 mins.
Heat 01 tbsp ghee in the pressure cooker and add in the whole bay leaf , dried chilli - Next add in the salted meat pieces and braise them on high flame for 10 mins , till the meat gets some brown color.
Remove the meat and keep aside on a plate .
Heat the remaining ghee in the same pot and add in the cumin seeds , onion paste , ginger - garlic paste and saute .
Add in the cumin powder and red chilli powder , pepper powder and salt to taste and fry everything well , till you see the oils separating .
At this point , add the meat back into the pressure cooker , along with the potatoes , spinach leaves and the tomato chunks .
Mix everything together and add in the water
Pressure cook for 03 whistles or till the meat is boiled throughout .
Top with home made garam masala and serve hot !
