Dim'er Kosha

Are you an Anda curry fan - well , if yes , then you are on the right page my dear reader ! I realized that the humble anda curry is possibly the only Indian dish that has multi versions in every regional Indian cuisine and each of these preparations are quite stand- out . One of my foodie friends in south India , elevates the curry with beautiful coconut milk while in west , i have tasted the likes of the spicy kohlapuri version or a simple curry with peas and potatoes . In east India , we call it the mighty dim'er ( Dim - meaning Egg ) Kosha . Let me share with you that making dim'er kosha is not difficult and if you have the eggs hard boiled and ready to go , then it is just a matter of putting everything together.
The secret to a good dim'er kosha however is “patience”. Yes , the masala needs time to cook and if you don’t give it enough time, it will never turn out delicious or get the color . Cooking the onion, tomatoes and spices on low heat for a extended period of time really enhances the flavor and that is the only way you can get a delicious curry ! Let me take you through this ...
Things you will need
05 eggs , hard boiled and peeled
02 large potatoes , diced to 4 pieces each
o1 large onion - grated finely
01 tbsp ginger - garlic paste
01 small tomato - made into a paste or grated finely
01 tbsp Kashmir chilli powder + 01 tsp turmeric powder + 01 tsp cumin powder
01 tbsp sugar
03 tbsp mustard oil
01 Bay leaf + Whole garam masala ie 01 whole clove + 01 whole cardamom + 01 small cinnamon stick + 01 whole dried red chilli
2 tsp Homemade Garam Masala powder
1/2 cup water
Salt to taste
Steps
1. Place the hard boiled eggs and potatoes in a bowl and rub lightly with salt and a pinch of turmeric powder - Heat 02 tbsp of oil in a pan and fry the eggs and potatoes till nice and golden brown . Keep aside.
2.Pour in the remaining oil into the pan and heat
3. Temper the oil with bay leaves + whole garam masala + whole dried red chilli
4. Now , add the onion & ginger -garlic paste and fry along with sugar , till you see some color Next , add in the tomatoes and the dried masala powders ie. Kashmir chilli powder + turmeric powder + cumin powder + 1 tsp powdered garam masala and fry
5. Slow cook this mixture for up to 25 mins , till you see a bright red color come through Add a dash of water with every stir to avoid burning of the spices .
6. Add 1/2 cup of water and bring to a boil
7. Add in the eggs and potatoes and simmer on low flame for 5 mins
8. Top with 1/2 tsp of home made garam masala , a dash of ghee and serve
