Home-style Omelette Curry

This recipe is for those days when you want something quick yet soulful on the table . To get this going , I am hoping you have been looking up into the hungry boy chronicles and also that , you are stocked up on a a few eggs . If yes , then this recipe is just for you :) This simple omelette curry is an age old favorite and a very frequent make in my home - Try this on some busy day, when you want to enjoy simplicity home-style !
Things you will need :
03 large eggs ( in room temperature )
04 tbsp of onion - ginger - garlic paste mix
01 small tomato , thinly sliced
02 tbsp of cumin powder
1/2 tsp chilli powder
1/2 tsp turmeric powder
01 tsp of cumin seeds
01 bay leaf
Handful of coriander , finely chopped
01 tsp of home made garam masala
01 cup water
01 tsp ghee
02 tbsp oil
Salt to taste
Steps to follow :
Beat the eggs in a glass bowl , add some chopped coriander leaves and salt and make 02 large omelettes out of this .
Cut each omelette into 4 quarters and keep aside .
In a frying pan , heat oil and temper it with whole cumin seeds and bay leaf .
Next , add the onion - ginger garlic paste along with all the spices and the tomatoes and saute well , till the oil is separated .
At this point , add 01 cup of water and bring everything to a boil and cook covered for upto 10 mins .
Next , add in the omelette pieces and let them soak in the gravy for a minute.
Remove from heat and top with garam masala and ghee .
Serve hot with rice or roti - Enjoy !
