Shojne Data'r Chorchori

One of the main side dishes of any Bengali full meal is a 'Chorchori' - A chorchori can be defined as a vegetarian dish , which is prepared by slow cooking the vegetable in its own juices along with paanch phoron . It is made in many variants , sometimes with a specific vegetable or otherwise , with an array of vegetables . They key to making a good chorchori is to have all vegetables cut out in equal size and shape - this facilitates a uniform cook and keeps the vegetables crunchy .
Shojne Data or Moringa / Drumstick is a super food and remains deep rooted in cuisines across Bengal and Southern India . It is one of those rare plant species whose seeds, flowers, leaves, and stems are all edible and extremely nutritious . In this recipe , the Shojne data
( Drumstick ) is the hero of the chorchori . It is super easy to make and goes well with both rice and roti . Let me take you through the steps.

Things you will need
300 g Shojne data ( Drumstick )
03 tbsp mustard oil
1 pcs dried red chilli
1 tsp paanch phoron
02 tomato's - roughly grated
1 pcs green chilli
2 tsp turmeric
Handful of coriander leaves - finely chopped
Salt and sugar to taste
Steps to Follow
Peel and cut Shojne data into 3-cm-long pieces and boil them in the pressure cooker with 01 whistle . Drain the water and keep aside .
Do not overcook or the Drumstick's will loose its crunch .
Heat the mustard oil in a kadai and temper it with dried red chilli , green chili and paanch phoron .
Next , add in the tomato paste , along with some sugar to taste .
Add in the salt and turmeric and continue cooking till some oil is released .
At this point add in the boiled Shojne data ( drumstick ) and cook together slowly on low heat, for about 20 minutes or so.
Uncover the pan and garnish with coriander leaves to serve.
