Steamed White Pomfret

So , today being Sunday , its time for yet another simple but elegant cook . Being at the fag end of the weekend , I am at my laziest best and doused in oil from head to toe - so , cooking definitely needs to be a simple and fast forwarded affair . I had some sweet smelling Pomfret in my refrigerator and i wanted to devour the goodness of it , without overloading it with too many spices. Any form of steamed food , therefore , is my go to during such days . All one really need's to do is think of a good marinate and voila , the steam and spices do all the ' cooking ' while you sit back and enjoy your pedicure :)
For those of you who are new to the pescatarian world , Pomfret is a lusciously flaky fish and has a firm texture , for which it is considered as one of finest species by taste . This steamed white Pomfret is one of my favorite recipes - give it a try sometime and give me a shout if you enjoy it ! If you do not have white Pomfret , feel free to use any sort of flaky fish like a Barramundi or Salmon . Happy Steaming guys and girls !

Things you will need
03 pieces of whole Pomfret
Aluminium Foil
03 finely chopped green chilli
06 tbsp mustard oil
For the Marinade :
01 cup coriander leaves
1/2 cup mint leaves
06 cloves of garlic
04 green chillies ( Use as many , depending on how spicy you want it )
01 inch ginger
01 / 2 tsp peppercorns
Salt to taste
01 tbsp water
Steps to follow
In a blender , blitz all the marinade ingredients into a fine paste and keep aside .
In a plate , place your pomfret and make horizontal slits on both sides of the fish
Liberally rub the fish with the green marinade and stuff it lightly in all the nooks and crannies of the fish and within the slits as well .
Next , cut out 03 large squares of aluminium foil and place each fish individually on each square.
Top each fish with 02 tbsp of mustard oil and some chopped green chillies .
Cover the fish with the foil ( as if wrapping a gift ) and steam cook all of them for minimum 20 - 25 mins on low flame .
Unwrap and serve with lime wedges along with some steamed rice or as a evening starter with drinks !
