A ridiculously easy dessert to make - Chana'r Payesh

Making a quick dessert can not get easier than this particular payesh or kheer . It took me exactly 20 mins to prepare it , from the time i made the chana or cottage cheese . The end result was this beautiful , gooey , decadent bowl of goodness . You can alternate the home made cottage cheese with grated paneer - however , you need to be double sure that the paneer you use is absolutely fresh and has not been sitting in the refrigerator . During summer months , when you want to make some cold , lightly sweetened dessert for any occasion or party, then a Chana'r Payesh is the best option . Let me take you through this :)


Things you will need :

  • 01 Liter milk , made into chana ( home made cottage cheese ) OR 300 gms of finely grated paneer

  • 2/3 tin condensed milk

  • 01 bay leaf + 02 cardamom pods

  • 02 tbs cashew nuts and raisins

  • 01 pinch of salt

  • 1 cup water


Steps to follow :

  • In a heavy bottomed pan , pour the condensed milk along with water and whisk them together . Put this mixture on low heat and bring to a boil .

  • Next , add in the bay leaf + 02 cardamom pods - Stir continuously till everything is well incorporated and the milk has thickened slightly and coats the back of your spoon in a thin layer . ( Approx. for 10 min on low heat )

  • At this point , add in the chana or grated paneer along with the chopped cashew nuts and raisins into the milk mixture and mix well with a light hand.

  • Cook this for another 10 mins on low flame .

  • Remove from heat and adjust the flavor with a tiny pinch of salt.

  • Chill in small bowls and serve :)

Pro -Tip : Adding a bay leaf to any payesh or kheer gives it a beautiful earthy aroma . Also , i prefer to add a pinch of salt in the end , to enhances the favor of everything and balance the sweetness of the condensed milk
