Best of both worlds 'Cookie Dough Cake'

Sometimes you crave a Cookie , sometimes you crave a slice of Cake ..and then there are times when your heart wants the best of both worlds ..and on those days you unveil a Cookie dough cake !

Cake batters contain more flour and eggs and are whipped to produce airy textures while cookie batters are lower on flour and eggs (or made using no eggs at all at times ) , are best pre marinated t0 produce chewy / crunchy and dense results. While you cannot turn cookie dough into a cake batter - you can definitely transform cookie dough into a big cookie dough cake and that's exactly what we will guide you hear today . The beauty of this Cookie dough cake is in its layers and texture , your bite alternating between fudgy bitter sweet chocolate chip cookie dough and a tad bit salted buttery melt in the mouth vanilla cake .


We used leftover cookie dough from our chocolate chip cookie as the base to this tea cake , added some extra chocolate dunks and baked it all together , resulting in this soft fudgy , squishy tea time delight.

and put together half the portion size to prepare the cake cookie base.

Things you will need for the cake batter

  • 1 1/4 cups all purpose flour

  • 1 1/4 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup salted butter , softened to room temp

  • 3/4 cup powdered sugar

  • 2 large eggs room temperature

  • 2 tsp vanilla extract

  • 1/2 cup buttermilk , room temperature

Steps to follow :

  • Set the oven to preheat to 180 degrees Celsius

  • Line a rectangular 8 inch baking dish with butter paper and layer the base with the cookie dough - keep this in the fridge to chill as you prepare the vanilla cake batter .

  • To make the cake batter , sieve together flour, baking powder and 1/2 tsp salt.

  • In another bowl , beat butter and sugar with a hand blender on medium to high speed for 5 minutes until fluffy . Add eggs one at a time, beating well with each addition.

  • Add the vanilla essence and continue to combine.

  • Next , add the flour mixture in batches , alternating with the buttermilk and mixing to incorporate well with each addition.

  • At this step , Layer the cake batter over the cookie dough base and bake for 30- 40 mins , at 180 degrees Celsius till skewer comes clean .

  • Cool completely , slice and serve .
