Chocolate Peanut-butter & Coffee Muffins

I like my chocolate desserts dense . I start this post with this because i think the denseness is the essence of all that is desirable in chocolate and it's dark intensity is not something that should be toyed with . These muffins are the plainest of muffins , damp , heady and made aromatic with some coffee powder . I also think , this makes a beautiful dessert , either by itself or with some ice-cream / bowl of strawberries or maybe with a pitcher of white chocolate rum custard . The latter is the fussier option , but there are times when , perversely, that is what we all want .
On other days , i like these muffins simply sliced , with a cup of tea or coffee.
I will also confess that it absolutely goes very well with a spread of cream cheese.

Things you will need :
01 cup of plain flour , sifted together with 01 tsp baking powder
1/2 cup cocoa powder
01 tsp coffee powder
01 cup powdered sugar
100 gm softened butter
01 cup butter milk
02 large eggs
1/2 tsp salt
03 tbsp melted peanut butter
Steps to follow :
Beat the softened butter and sugar together in a big bowl .
Combine the eggs , followed by the buttermilk and the flour .
Lastly , add in the coffee and cocoa powder and incorporate everything well.
Separate the batter in muffin liners .
Top each muffin with a spoon full of peanut butter - sing a toothpick , create swirls on the muffin top with the peanut butter and the batter .
Bake for 20 mins at 180 degree Celsius till done . Enjoy !
