Crab Pepper roast: Messy fingers, happy heart

Some dishes are meant to be eaten with a fork and knife. Crab pepper roast is not one of them. This is the kind of meal that demands patience, messy fingers, and a willingness to slow down. The reward lies hidden beneath the shell—sweet, delicate crab meat wrapped in a fiery blanket of black pepper, curry leaves, and spices. The aroma hits first. Freshly crushed peppercorns crackling in coconut oil, onions caramelizing slowly, curry leaves dancing in the pan. Then comes the crab, soaking up every bit of that bold, spicy masala. There is no elegant way to eat it.
You crack, pull, pry, and chase every last morsel. Conversation pauses. Fingers get stained. Plates become battlefields. And somehow, that's exactly what makes it memorable.
Paired with hot neer dosa, flaky parottas, or simply steamed rice, crab pepper roast isn't just food—it's an experience.
Things you will need
1 kg fresh crab, cleaned and cut
3 tbsp coconut oil
2 large onions, finely sliced
1 tbsp ginger-garlic paste
2 sprigs curry leaves
2 green chillies, slit
1 tsp turmeric powder
1 tsp red chilli powder
2 tbsp freshly crushed black pepper
1 tsp fennel powder
Salt to taste
Juice of ½ lime
Fresh coriander for garnish
Method
Clean the crab thoroughly and lightly season with salt and turmeric.
Heat coconut oil in a heavy-bottomed pan.
Add curry leaves and green chillies.
Sauté onions until golden brown.
Add ginger-garlic paste and cook until fragrant.
Stir in turmeric, chilli powder, fennel powder, and half the crushed pepper.
Add the crab and mix well to coat with the masala.
Cover and cook for 10–12 minutes. The crab will release its own juices.
Remove the lid and roast on medium-high heat until the masala clings to the crab.
Finish with the remaining crushed pepper and lime juice.
Garnish with fresh coriander and extra curry leaves.
