Hello there !

So the news is that 2022 did not quite start as planned and here I am two weeks into home quarantine ! What consequents is that the upcoming recommendations ( till I fully recover ) will be extremely , extremely simple , to the extent some may feel like throw togethers ! All this , since suddenly somehow , a simple five minute prep time seems to be like full manhours of energy drain . While the day starts groggy with antibiotics , by afternoon , the mind wants to push back and knock off all the slow bells and DO SOMETHING before , well ( we try not to give up ) and circle back into our respective spaces!

To bring some happiness into this state of affairs , it stands important to stay afloat everyday and do best in what the circumstances demand . In this context , no better solace than having easy , low prep meals one can make at home . If you are also one looking for #lowprep dishes in such times , than this Fruit crisp is my 1st entry to just that !

If making a PIE is easier than baking a CAKE , making a GALETTE easier than making a PIE , making a COBBLER easier than making a Galette , than what could be more easier than making a COBBLER really ?

A fruit crisp off course ! Crisps and cobblers often get termed together as as the same dessert, but they are distinctly different. Cobbler require a biscuit-like dough and have a structure but Crisps are more like put togethers - they include whole oats, held together with a mixture of flour, sugar, and butter baked up crisp with oozy sweet fruit underneath .

The composition of the fruit is open to the hand - Apples , Oranges , Blueberries all work wonders . All this and more in just 3 simple steps !

Things you will need ( For 4 adults )

For the fruit

  • 2 tbsp granulated sugar

  • 1 /2 teaspoon cornstarch

  • 02 - 03 apples or assorted fruit of choice - peaches, plums, pears , oranges or cherries

  • 1/2 tsp freshly squeezed lemon juice

  • Lemon zest

For the crisp on top

  • 1 /2 cup rolled oats

  • 1/2 cup all-purpose flour

  • 1/3 cup packed light brown sugar

  • 12 -15 tablespoon butter, melted ( a little liberal there )

  • 1 teaspoon vanilla extract (optional)

  • 01 - 02 star anise ( optional )

  • 01 tsp cinnamon powder

Steps to follow

  1. Make the fruit filling - Mix the sugar and cornstarch in a medium mixing bowl until lump-free. Add the fruit and lemon juice and toss gently to coat. Transfer to the baking dish.

  2. For the crisp topping , combine all the ingredients in a large bowl and stir until combined. Scatter the crisp topping evenly over the fruit mixture.

  3. Bake until the fruit juices are bubbling around the edges of the baking dish and the topping is golden and firm to the touch, 30 to 35 minutes at 150 degrees celcius.

  4. Serve room temperature as breakfast or re-warmed in a low oven for 20 minutes as dessert accompanied with Ice-creams .
