Dark Chocolate Cake with Three Berry overload



I am crazy after handmade ceramics and quite a hoarder in that department (!) Every time i visit a ceramic store , i have to push my self through a continuous - serious debate on what to buy and what to leave behind ! Just like someone in a library , i can sit for hours together admiring the imperfections of a handmade ceramic or better still , watch someone put it together . Over the years , i have evolved to learn to stick to selected pieces and collect items - each of which have a story to tell .


Today's chocolate cake was an afterthought to receiving my new ceramic bowls , a therapeutic cure to combat mundane quarantine office assignments and a jingle to welcome the midweek . This cake is rich decadent dark chocolate combined with a three berry overload. Feel free to use any berry combinations and in case you don't have fresh berries , you can also use dried berried like i have done here . I have used a combination of dried black currant , blue berry , strawberry and some candied fruit from Fresho Signature range Big Basket. Take this dip , it is as easy as can be :)



Things you will need

  • 100 gms soft butter

  • 01 cup granulated sugar

  • 02 large eggs

  • 01 cup flour

  • 01 cup dark cocoa powder

  • 1/2 cup buttermilk

  • 1 tsp baking powder

  • 1 tsp sea salt flakes

  • 1 tsp whole oats

  • Three berry mix ( You can use dried or frozen )


Steps to follow

  • Line a 8 inch bread loaf tin with butter paper and keep aside.

  • Pre -heat the oven to 180 degree Celsius for 10 mins and keep warm.

  • In a bowl , sieve the flour , cocoa powder , baking powder and keep aside . This is the dry ingredients mix.

  • In a separate mixing bowl , mix the granulated sugar and butter till well incorporated . We use a hand held mixer for this but you can use a balloon whisk as well , till soft white peaks are formed .

  • Next , add in the 02 eggs , one at a time and mix well .

  • At this point , add in the butter milk followed by the dry ingredients (i.e flour cocoa mixture )

  • Fold in everything using a spatula - Do not over mix at this stage.

  • Lastly , add in the three berry mix .

  • Next , put this cake batter into your earlier prepared tin and top with more berries , the sea salt flakes and some whole oats . Bake the cake for 40 mins at 180 degree Celsius till well done .

  • Let it cool before you slice up to serve !



Pro - tip : I always add sea salt to my chocolate cakes as it elevated the flavor to another level . Try it and let us know what you think !
