Things you will need ( Makes 02 servings )
01 /2 cup of thick whipping cream
01 can of canned fruit ( I used a delmonte fcanned fruit cocktail but you can choose any other brand you like ) OR you can also put together an assortment of chopped fresh fruit at home .
01 cup fresh watermelon juice for the granita
01 - 02 pieces of plain vanilla cake ( optional )
Steps to follow
First , make the watermelon granita . Do this a day in advance so that the rest of the assembling happens quickly . To make the granita , pour the watermelon juice into a dish and transfer it into the freezer for two or three hours, until ice . Then begin the process of lightly shaving the top , frozen layer with a fork . Repeat the occasional scraping process until the entire mixture is shaved. Store this , covered in plastic wrap, until ready to serve.
In a bowl , combine the whipping cream with the assorted fruit. Add a tsp of sugar or a tsp of the canned fruit syrup , if needed , for extra sweetness.
In a serving glass , layer the vanilla cake , which you can lightly crumble by hand along with a generous portion of the fruit cocktail mix .
Place the servings in the fridge to chill for 01 -02 hrs. ( Do not place in the freezer )
When ready to serve , scoop a portion of the watermelon granita as the top layer - add some finely chopped watermelon and a small sprig of mint to finish.
Your stylish and super classy dessert is ready to be devoured !
