Go Bananas !

I obsess over banana cake - One , because it is low on sugar and is made sweet naturally from overripe and spotty bananas and second because , it is light , super moist , perfect as tea time treat as well as a make ahead . Drizzled with a light and luscious stove top butter caramel , rest assured , it will help you do away with any gloom whatsoever in your mind or your heart , almost as if instantly .


I also use this batter to make banana muffins as they are the best to pack whenever headed out for a long road trip or as a secret snack while travelling away from home .


To make it a notch higher and present it as a fancy centerpiece dessert , you can choose to frost it with chocolate buttercream or with a basic cream cheese frosting . You can also serve it with classic scoop of vanilla ice-cream and top it off with some baileys Irish cream liquor.

Things you will need :

  • 08 small ripe and spotty banana's or 03 large Singapore banana's

  • 100 gms softened butter

  • 01 cup of brown sugar

  • 03 tbsp. yogurt combined with 1/2 cup water +01 tsp baking soda

  • 02 cups of flour sieved with 01 tsp baking powder

  • 01 handful of berries ( optional )

  • 02 large eggs , at room temperature

  • 02 small banana's , thinly sliced

  • 03 tbsp. melted butter

  • 01 tbsp. sugar

Steps to follow :

  • Oil and line an 8 inch round tin with butter paper and keep aside.

  • Set the oven to preheat at 180 degrees celsius

  • In a large mixing bowl , mash the banana's and whip them along with the brown sugar till both are well combined and a gooey mix .

  • To this , add in the softened butter and combine for another 03- 04 minutes.

  • Once done , add in one egg at a time , followed by the yogurt & baking soda mix.

  • Add in the sieved flour and combine all the ingredients , until well incorporates

  • Line the base of the cake tin with the banana slices and pour the batter into the tin .

  • Bake this for 30 minutes at 150 degrees celsius till done - cool on a wire rack .

  • Invert the cake onto a plate to reveal the beautiful caramelized banana top.

  • When ready to eat , heat 3 tbsp. butter along with 01 tbsp. of sugar in a pan on low flame until dark brown - pour this light caramel on top of the cake and serve .

  • Pair it with a cup of cappuccino to make it divine :)
