Salads , when put together with the right dressing , are an absolute treat - also they can be some of the best ways to eat colorful and nutrient-dense foods. A HEB is my all time favorite and is super easy to put together ( almost as easy as throwing things into a bowl ) . It brings beautiful and non hassled flavors onto the table . Also , I like to make it a wholesome meal with the addition of some chunky bread croutons and some feta cheese ( the latter being completely optional )
This HEB salad might sound simple, but it's utterly divine. It’s a lot about simplicity and shows how some thinly sliced Ham and greens, when marinated in balsamic and olive oil dressing for a few minutes can do wonders . It’s bright, it’s crunchy, it’s hydrating & works for any meal for any season .
Give it a try and let me know what you think !

Things you will need ( Makes 01 Adult portion )
01 cup of assorted green mix - I used a mix of Arugula and Lettuce leaves
1/3 cup cherry tomatoes , sliced in half .
01 small onion , cut into rings and separated
01 Egg ( Fried and roughly sliced )
02 - 03 slices of smoked ham , roughly sliced
02 slices of sourdough loaf or simple bread loaf ( Hard toasted and cut up in rough chunks )
01 - 02 blobs of fresh feta ( Optional )
For the Dressing
01 tbsp Olive Oil
02 tbsp Balsamic Vinegar
01 tsp Honey
Salt and Pepper for seasoning
Steps to follow
Always remember to dry out all the greens on a kitchen towel before you start assembling any salad - Ensure all the greens are completely water free and dry to avoid excess wilt and retain the crunch in your salad. Toss all the ingredients ( Barring the bread and the cheese ) into your salad bowl.
Combine the dressing ingredients in a small jar and give it a good hearty mix. Toss this dressing onto your salad main ingredients and keep it aside for 2-3 mins for everything to soak in the flavors. Serve , topped with the sourdough croutons and feta.
Once you enjoy this - let me know what you thing of this goodness , this is truly that simple and heart warming :)
