Refresh with a Watermelon & Feta Salad

Come summers , I love to refresh with a salad every now and then and insist to create them only with fresh ingredients which are in season . This year , we are already seeing beautiful watermelons everywhere in the city and what better than to toss up this wonderful fruit. If you are looking for a super refreshing , healthy yet fuss free salad recipe then watermelon is all that you need. This toss up is the perfect marriage of sweet and salty and is most definitely one of the best salads on the block . I topped mine with some kiwi fruit and dehydrated blueberries ( out of my own fancy ) but you can feel free to completely omit them and just stick to the melon and feta .

This unique flavored salad is a ' must try' if you love everything watermelon'ny !

Before we start , some quick tips as you prep :

  • Ensure you deseed the watermelon chunks completely.

  • Use chilled watermelon for this salad

  • Use block feta that you can crumble on the spot .

  • Swap fresh basil with fresh mint or vice a versa , based on what you have.

  • I added Kiwi fruit as a pairing but you can use any other fruit of your own choice . However , whichever other fruit you choose to use , ensure to use it in very limited quantity , as you want the watermelon to be the hero here.

Things you will need :

  • 01 cup of diced chilled seedless watermelon

  • 02 tbsp. of feta cheese

  • 02 - 03 sprigs of mint or basil leaves

  • Handful of dehydrated blueberries

  • Handful of fresh lettuce leaves ( Optional )

  • 01 kiwi fruit , roughly diced ( Optional )

  • For the dressing : 02 tbsp. balsamic vinegar + 01 tbsp. olive oil + salt to taste

Steps to follow

  • Toss all the ingredients into your salad bowl .

  • Mix the dressing and pour liberally over the cut fruit , season with salt and toss together . Place onto your serving bowl .

  • Top with crumbled feta and blueberries .

  • Serve and enjoy :)
