I was recently watching Charlie and the Chocolate factory which happened to be one of my most favorite books as a child . Thanks to Tim Burton , what was in a book for me then comes alive in beautiful imagery along with vivid screen play by Johnny Depp . What strikes me more watching it now is just how marvelously imagined our world can actually be . Willy Wonka , the genius candy-maker not only invents "eatable marshmallow pillows," "rainbow drops that let you spit in six different colors '', "hot ice cream for cold days'' but also so much more ....

Speaking of Ice-creams , the world of ' No churns ' can be as marvelously imagined as the inside of Mr. Willy Wonka's factory itself ...Making the cream base in a No churn Ice-cream is as simple as simple can get & the play of infusing flavors into it is as open to far imagination as you choose to go .

No-churn ice-cream means there’s no need for an ice cream machine to make this creamy ice-cream ...

Now , you will be thinking what is in this No-Churn Ice Cream ?


Well , the base of this comprises a vanilla cream concoction which you can dress up and create various flavor profiles. Keep reading to see my flavour suggestions ! And trust me when I say, this is the easiest way to make creamy ice cream that isn’t icy .


The ingredients needed for the base are 3 simple pantry ingredients :

  • Condensed milk

  • Whipping Cream

  • Vanilla Extract

Once you have all 3 ingredients whipped up , all you really need to do is spilt the cream into separate freezer boxes - flavour them separately and freeze overnight . After this , it is only a quick skip to your home freezer to enjoy different flavour combos for weeks together !


Things you will need :

  • 02 cups of heavy whipping cream

  • 200 gms of condensed milk

  • 1 teaspoon of vanilla extract

Steps to follow

  • In a large bowl, use a hand blender whip the cream until stiff peaks occur ( be careful not to over whip the cream or it will split )

  • In another large bowl, whisk the vanilla extract along with the condensed milk.

  • Using a spatula , gently fold in the whipped cream into the condensed milk mix , slowly combining the two mixtures together such that it all stays well aerated.

  • If making individual flavors, scoop the cream mixture into smaller bowls and gently fold in your desired flavors.

  • Transfer the mixture to a covered box and freeze overnight before serving.

Listing below my top 8 flavour pairings :

  1. Triple Berry : We love to use berries in our Ice-cream ( mostly in the fresh form ) basis whatever is in season . You can also use frozen berries off course - In both cases you will need to break the berries into a jam over low heat with some sugar , cool it down and then infuse it into the cream base.

  2. Mocha Chocolate : Break up bits of bitter chocolate and infuse the cream base with the bits of chocolate and a spoonful of coffee.

  3. Pepper and Strawberry : Mix chopped fresh strawberries, black pepper and some white chocolate chips .

  4. Pinacolada : Infuse with bits of pineapple , coconut and some Malibu liquor.

  5. Salted Caramel Bourbon : Melt sugar over a pan till caramelized , to this add in some butter , cream , some bourbon liquor and salt to thicken . Ripple this salted caramel bourbon through the cream base.

  6. Indian Cardamom : Douse the cream with powdered cardamom

  7. Rosemary & Lemon : Fold in lemon rind and roasted rosemary + Limoncello liquor - if available

  8. Cheese and Caramelized Apple : Fold in cubes of caramelized apple and processed cheese .

Note : Before you serve, allow the ice cream to sit for 1 minute at room temperature - wet an ice cream scoop and spoon into dishes or cones ( Eating straight from the container also allowed in this case :) ! )
