Lemon Blueberry cake

Fruit is always delicious to eat year-round but there is something about them that always makes me want to convert them into beautiful fruit cakes all the more . Recently , the husband got home a bunch of blue berries and i though why not experiment with them. Pairing it with key lime is a great combination and brings out the flavor of both the fruit and the lime even better . I am keeping this as a simple tea cake - however , in case you wish to dress it up , a cream cheese icing or a berry compote pairs perfect to take it a notch higher . Take a look !
Advice from the humble Blue Berries - Be well rounded - Soak up the morning sun - It's OK to be a little blue sometimes to have a fruitful life :)

Things you will need
1 and 1/2 cup granulated sugar
200 gms butter ( at room temperature )
03 medium sized eggs ( at room temperature )
02 cups of flour
01 tsp of baking powder
01/2 cup of buttermilk
01/2 tsp salt
01 whole lime juice
01 tbsp lemon rind
01 cup of blueberries , rolled lightly in flour
Steps to Follow
Line a 9 inch cake tin with butter paper and keep aside.
In a separate bowl , sift the flour , baking powder and salt and keep aside.
Simultaneously - preheat the oven at 180 degrees celsius and keep warm .
In a large mixing bowl , beat the sugar and butter till it is creamy white and makes soft white peaks . You can use a handheld mixer if you have one or you will need to use a balloon whisk and all your might to get this done .
Once done , add in one egg at a time and incorporate well .
Next , add in the buttermilk followed by the pre- sifted flour mix . Mix everything well lightly but do not over mix the batter at this point or you will knock out all the air from the batter .
Add in the lemon rind , lemon juice and blue berries .
Pour everything into the baking tin and bake for 30 - 40 mins on 180 degrees till done . Once done , cool completely in a cake rack .
Dust with some sugar powder and serve with a berry compote or vanilla ice cream :) Keeping the creme cheese icing for another day !
Pro - Tip - Toss the blue berries in some flour before tossing them into the batter , this way they will not sink into the bottom of your cake . Enjoy ..
