Moist Wild Honey Tea Cake

The gorgeousness of good quality Honey is quite undisputable and some amount of time put into researching the kind of honey you buy is always time worth invested . I personally

feel , the darker and wilder the form of honey , the more intense it is in taste . I always choose wild honey for my kitchen bakes and meat roasts , as the darkness of it makes everything you pair quite intense and only ' mildly sweet ' to an extent.


I was quite pleasantly surprised when a honey connoisseur during one of our visits to Coorg told me that wild honey is made by the bees from the nectar of some selected wild flowers only - some of which have medicinal properties . Hence it is the best form of honey to consume both in terms of sugars and the healing properties they contain . Also , more often than not , the best part of this kind of Honey is that it gets bottled far away from civilization and hence is often free from adulteration & pollution and brings to you all the goodness in its truest organic form from the wildflowers.


This Honey tea cake is one of my most favorite tea time treat made using Wild Honey which makes it dense , buttery and super moist . Also , the color of the cake is a dark natural amber and the aroma is quite unparalled . You can also use normal honey while putting this cake together , but you would be definitely be compromising on the natural color of the bake and also the aroma .

Things you will need :

  • 1 1/3 cup all purpose flour

  • 100 gms butter at room temperature

  • 1 tsp baking powder

  • 1 tsp salt

  • 1/4 cup finely granulated sugar

  • 3 large egg at room temperature

  • 1/3 cup yogurt and water ( mixed in equal parts )

  • 2 tsp vanilla essence

  • 1/2 cup wild dark honey

Steps to follow :

  • First, start by preheating the oven to 180 degree Celsius

  • Butter and line a medium sized baking tin or a loaf tin and keep aside as you assemble the batter .

  • In a large bowl , whisk the butter and sugar together until white and frothy. Then , add one egg at a time along with the vanilla essence and mix together. At this point , add in the honey and yogurt - water mix into the batter .

  • In another bowl , sift the dry ingredients - i.e the flour, baking powder, salt together . Combine these dry ingredients with the egg - honey mixture , folding everything with a light hand to form a well mixed batter.

  • Pour the batter into the prepared baking tin and bake for 35-45 minutes. You will know that the cake is ready when it no longer jiggles in the center and has a golden brown top - Also , a wooden skewer comes out clean when inserted in the center .

  • Pull the tea cake out of the oven and let it cool down for 20 minutes

  • Serve immediately or store in an airtight container in the fridge for up to 4 days.

  • Glaze the top with powdered sugar or icing ( Completely optional )

  • Perfect with English tea !
