Orange & Avocado Salad with Balsamic dressing

This refreshing Orange and Avocado Salad makes a very colorful and flavorful lunch or dinner meal salad. If you love citrus , this salad is definitely for you . I always serve these salad's as a meal and add some grilled chicken or fried herbed chicken as a side.


Some tips before we start :


  • Use good quality oranges only

  • Make sure your avocado is ripe and not mushy.

  • Pre -soak your greens in ice cold water

  • Make sure you have removed every bit of water from your greens before you assemble them with the dressing - they should be dry and crunchy for the best texture.

  • Assign a small glass jar in your pantry to shake up the salad dressing .


Things you will need


  • 1/4 cup fresh orange juice

  • 1 tbsp balsamic vinegar

  • 3 tbsps extra virgin olive oil

  • 01 English cucumber - chopped into cubes

  • 02 oranges - chopped into cubes

  • 1 avocado , peeled and diced

  • 1/2 cup (1.5 oz) thinly sliced red onion

  • 3 cups lettuce greens (mix of romaine and spring mix)

  • 08- 09 cherry tomatoes

  • Handful of walnuts and raisins

  • 1/3 cup feta - optional

  • 1 tsps sugar

  • 1/4 tsp sea salt


Steps to Follow


  • In a small jar , shake up the orange juice, lemon juice, balsamic vinegar , oil, sugar and salt vigorously , until combined.

  • In another mixing bowl - mix the oranges , avocado , cucumber , cherry tomato , red onions .Stir in the orange juice mixture gently into this - let it cover all the ingredients generously and soak for 01 minute .

  • In your salad bowl , arrange the lettuce leaves and heap up the orange - avo mixture.

  • Top with handful of walnuts and raisins and feta cheese .

  • Serve !


Pro - Tip : Wet greens are salad enemies and even a little bit of water on your greens will repel the oils in salad dressing and not coat the leaves. Instead , you will have a puddle of water at the bottom of the bowl and eventually, wilted greens . Always squeeze out every bit of water from the greens - I suggest lay them out on a towel to dry to be doubly sure and retain the texture ! Happy Salad-ing !
