Tutti- Fruitti Tea Cake

A simple tea - cake is a favorite in the Gupta Household . My better half always nudges me to bake this cake and i happily oblige , as this is a very basic and easy to follow recipe , with no fancy steps. This is just a plain cake with a simple and elegant flavors and the right type to pair with your evening tea . These days , except for the Iyengar bakery in Bangalore , the good old tutti fruitti cake is mostly unseen . I am happy to re- hero this flavor on my blog .
Google defines Tutti - Fruitti to having originating in Italy and as a '' colorful confectionery containing various chopped and usually candied fruits, or an artificial or natural flavoring simulating the combined flavor of many different fruits. It is most notable in Western countries outside of Italy in the form of ice cream ''
In India Tutti - fruitti is prepared from candied papaya extract and flavored with extract from various berries , raisins and pineapple . Let me take you through this bake .
Things you will need ( All ingredients need to be in room temperature )
01 cup plain , self rising flour
01 tsp baking powder
02 medium sized eggs
01 cup of granulated sugar
100 gms butter
100 gms tutti - fruitti
01 tbsp of vanilla extract
01 tsp salt
1/4 cup buttermilk

Steps to Follow
In a mixing bowl , add butter and sugar together and whisk with a hand held mixer till fluffy . Add eggs , one at a time and whisk after each addition till the mixture is well incorporated.
Sieve flour with the baking soda and salt and keep aside .
Add the the buttermilk to the egg mix . Do not worry if you find it curdle . Fold in the flour mixture immediately , till everything is well incorporated .
Lastly , pour in the vanilla extract .
Do not over mix the batter or else , the cake will turn dense .
Baste a 8" loaf pan with some white oil and line it with butter paper on all sides . Pour the batter into this and move it inside the oven .
Preheat the oven at 180 degrees celsius and bake for 30 mins or till done.
