Meet Dahi Vada : the tangy & spicy bowl of goodness you should be eating !

If you are a yogurt fan and a digger for something sweet , spicy , tangy and soul tantalizingly good , then this Indian appetizer is something you must definitely have up your sleeve . A commoner in most parts of India , this dish is super easy to make at home and is heart renderingly comforting and perfect for all seasons . This beauty traces its roots back to the kitchens of Mughal India - it is believed that in the early 18th Century, the Mughal kitchens assembled this charming dish , using an assortment of spices to aid digestion . The delicious come together of the spicy green chutney , sweet tamarind with the yogurt and spices , play the best tease to the human palette .


The Dahi Vada is also a guilt free snack since it is accompanied with the goodness of yogurt and hence , i promise you can eat this un -inhibited . Also , the pro- biotics in the yogurt help with the good bacteria in the gut . All in all its a great thing to make , be it for a house party or a pot luck or just to eat all by yourself at home during this quarantine :) . But before we begin , let me 1st share with you a brief pre- read on the 02 must -do chutney's you will need !


Tamarind Chutney: This classic Indian condiment is sweet, sour and spicy . It is made by boiling together tangy tamarind pulp with red chilli powder , salt and a sweetener like sugar or jaggery
Green Chutney: Also known as pudina - dhania chutney , this is made primarily by blitzing cilantro, mint, garlic, ginger, cumin and chilies. This chutney is also both spicy and refreshing.

Thinks you will need :


To make the Vada ( Makes 10 -12 vada's )

  • 01 large cup soaked Urad dal

  • 02 tsp ginger , finely chopped

  • 01 small green chili , finely chopped

  • Oil for frying

  • Salt to taste

  • 01 tsp of baking powder

To assemble

  • 01 cup of thick yogurt

  • 1/2 cup of water

  • 02 - 03 tsp green chutney

  • 02 - 03 tsp sweet tamarind chutney

  • Roasted Bhaja Moshla , as per taste ( Dry Roast 02 tbsp cumin , 02 tbsp coriander , 01 tbsp fennel , 01 dried red chili and make into a fine powder )

  • Sprinkle of Red chilli powder , as per taste

  • Sprinkle of black salt , as per taste

  • Sprinkle of chat masala , as per taste

Steps to follow

  • Soak the urad daal in a bowl of water overnight. Grind it into a paste the next morning. Add the green chillies , baking powder and ginger to this paste.

  • Mix 1 cup of yogurt with 1/2 a cup of water and salt to taste. Keep aside.

  • Heat oil for deep frying the vada's on a medium flame.

  • Grease your palms with oil and put 1 tbsp of the lentil mix into your palm. Make into a donut shape ( this is the vada). Slide each vada into the hot oil and fry till light golden.

  • Once done , put them immediately into a bowl of plain water - Allow to soak for 5 -10 minutes.

  • Remove the vada from the water and press gently between your palms.

  • Arrange the vada's in a deep platter and pour the thick yogurt over them to cover them completely. Chill this in the refrigerator for a few hours or overnight before serving.

  • To serve, put 1 or 2 dahi vada's in a bowl and garnish with tamarind chutney and green chutney along with all the other masala's as per taste .
