Mushroom Toastinies :)

Hello people ...
Happy to share this bright , colorful , flavor packed , quick and easy wonder creation that happened to me tonight . I am calling them ' Mushroom Toastinies ' as they are my hybrid version of a crostini + toast (!) . This healthy and yummy concoction topped liberally with red pepper , garlic , thyme and coarsely ground pepper is indeed a flavor bomb . Served simply by itself or alongside an egg or a garden salad is a sheer delight . In case you are feeling super indulgent , feel free to add chunks of cheese and devour your way through this .

Things you will need :
1 tbsp butter
100 gms mushrooms – sliced or quartered
02 - 03 red peppers , roughly sliced
4 cloves of garlic , roughly chopped
1 onion – thinly sliced
2 tablespoons fresh thyme
1/2 tsp zest of a small lemon
Salt and pepper as per taste
2 - 3 pieces of toasted sourdough bread
Steps to follow :
Heat butter over medium heat on a skillet - add in the onion , garlic , mushrooms along with the seasoning and sauté , until the mushrooms start to sweat.
Cook-off all the mushroom liquid on low heat - Next add in the thyme , red peppers , lemon zest and cook off about another 2 -3 minutes.
Pile this over warm sourdough toast or any hard toasted bread .
Top with cheese ( optional )
Serve it with a garden salad to call it dinner :)
