Poached Chicken in Soy Ginger broth

Rainy days are for simple food and my poached chicken in a delicate soy ginger broth is always a winner. Served with silky udon noodles , this boiling aromatic broth is punched with layers of flavor and made with the most simplest of ingredients . The best part is that this broth is so easy to make, you will love every bit of it from start to finish. Also perfect for you if you are feeling a little under the weather.
Things you will need ( Makes 02 portions )
To make the broth :
02 large pieces of chicken breast
02 cups of water
02 tbsp. of good quality soy
02 tbsp. of ginger , finely chopped
01 - 03 cloves of garlic , finely chopped
01 - 02 spring onion , finely chopped
01 tsp oil
01 onion , thinly sliced
Handful of coriander leaves
Salt to taste
To serve :
Udon noodles - boiled al dente
01 carrot , cut into thin slices
01 radish , cut into thin slices
01 red bell pepper , cut into thin slices
02- 04 French beans , thinly sliced
01 green chilli , cut into thin slices
To make the Soy - Ginger broth :
In a large pan , heat 01 tsp of oil and toss in the onions and sauté for 2-3 seconds .
Once translucent , add in 02 cups of water and bring to a boil .
To this , add in the chicken breasts and allow it to simmer on low flame till fully poached. Remove the chicken from the broth and allow to rest .
To the broth , add the rest of the aromatics i.e ginger , soy , garlic , green onion , coriander and salt . Allow the broth to simmer for 15 minutes on low flame. Once done - remove from heat and allow it to rest for 30 - 40 minutes .
Once rested , pass the broth through a clean muslin cloth and strain out all the solids to yield a clear broth . Put the clear broth back on heat and bring it to a boil.
To Serve
Slice up the poached chicken into thin slices.
In a soup bowl , arrange the al dente noodles along with all the thinly sliced vegetables and the chicken .
Top generously with sliced green chilli .
Slowly pour the boiling soy broth. Enjoy the goodness !
