Prawn Biriyani

This dish is my own innovation . Due to the less cooking time of prawns , this is a very simple & home style and can be done in no time. I always pair it with creamy onion raita and voila , its good to go !

Ingredients for the Marinade 300 Gram Prawns (shelled , deveined and washed) 1/2 tsp Turmeric powder 1 tsp chilli powder 1 tsp Salt 1 tsp ginger and garlic paste 1/2 cup yogurt
Step : 1st , marinade the prawns -In a bowl , place 1/2 cup yogurt , turmeric, chilli powder, salt, ginger, garlic , garam masala powder and marinate the prawns for approx 01 hour.
Make the Birista for the Garnish
03 medium sized onion , thinly sliced
02 tbsp ghee
01 tsp sugar
Step : Deep fry the thinly slice onion in ghee with the sugar till golden brown and crisp . This needs to be a monitored step or you will risk over caramelizing the onion . Your birista should look like below .

For the Biriyani 02 medium size sliced onion Whole Garam Masala
01 star anise + 01 stick cinnamon
02 large pods of black elaichi
01 bay leaf , 03 cloves 1/4 tsp garam masala powder 1 cup Basmati rice - soaked 2 cups of water 03 tbsp ghee
2 tbsp Coriander leaves, finely chopped 2 tbsp Mint leaves , finely chopped Steps
1. Take a heavy bottomed pan - add the ghee & heat - Stir in the whole garam masala and the sliced onion and saute for 5 mins 2. Once slightly browned , toss in the prawn mixture in this and continue to cook for 3-4 mins on medium heat .
3. Next add the Basmati rice and continue to cook this for another 5 mins on medium heat till slightly golden brown . 4. Add water & seal the pan for dum - place over low heat for 35 minutes. 7. One biriyani is done , garnish with previously made birista , coriander , mint leaves and serve hot !
