Taco Thursday

Here is what usually happens to us as we near mid - week . Our fridge is stuffed with left overs and i am desperate to clear the same but also avoid wastage as much as possible . It is also this time of the week , when i curse myself the most over my self inflicted ' variety disorder ' . With this type of disorder , i am unable to eat the same preparation more than two times , no matter how good it may be . To combat my sense of guilt and being the self declared ingenious cook of the household , I bear the responsibility to re-think and re-engineer these leftovers into something better and interesting . This recipe of the Taco Thursday was one such re- engineer masterpiece.

Things you will need


  • Hand full of Fresh Lettuce

  • 01 Red / Yellow bell pepper - chopped into small pieces

  • 01 Bunch of green onion - finely chopped

  • 01 large onion - finely chopped

  • Handful of coriander leaves - finely chopped

  • 01 English cucumber - slit horizontally in long slivers

  • 1/2 cup of Greek yogurt

  • 01 cup flour

  • 01 tbsp olive oil

  • 02- 03 cloves of garlic

  • Salt to taste

  • 01 Lime


Steps to Follow


Making the Taco


  • Mix the flour in a bowl with the olive oil and 01 tsp salt . Bring the flour together into a dough using some warm water .

  • Roll the dough into small roundels and roast on a roti tawa .

  • Keep Aside - This is your ready homemade taco shell .


Making the Filling


  • In a bowl , mix the chopped onion , bell pepper , green onion , coriander leaves with a dash of lime juice and salt .

  • In a separate bowl , beat the Greek yogurt with salt and a dash of olive oil . Keep aside

  • Shred your leftovers ( in our case we had curry chicken , which we removed from the bone and chopped into small pieces )


Assemble the Taco


  • Place the taco on a chopping board and place the lettuce leaves to form the base

  • Next , fill in the chicken chunks and top with the onion - bell pepper salsa filling

  • Top with Greek yogurt , salt and pepper to taste

  • Ready to devour :)
